Ingredients
· 3 very ripe bananas (spots are perfect!)
· 5 eggs
· ½ cup olive or avocado oil
· ¼ cup coconut flour
· 1 Tbsp ground flax seeds
· 1 cup walnuts, chopped
· 1 tsp baking soda
· ½ tsp salt
· ¼ cup coconut sugar
· 1 scoop protein powder (I recommend this one, but if you need dairy-free then choose this one - use promo code “GFN” for a discount off both of these!)
Preparation
1. Preheat oven to 350 degrees F, or 175 degrees C.
2. Mash bananas in a large bowl.
3. Add remaining ingredients to the bowl, and mix thoroughly.
4. Line a bread pan with parchment paper, and pour the batter into the pan. Once the oven is fully heated place the pan on the middle rack of the oven.
5. Bake for about 55 minutes, or until you can put a toothpick into the loaf and it comes out clean (bake times may vary depending on your oven).
6. Remove from oven and place on a cooling rack to cool for at least 10 minutes before eating. Top with grass-fed butter, peanut butter, or Greek yogurt for some extra protein and enjoy!
