Smoky Roasted Cauliflower Dip

As we move out of winter and into spring and summer, the time for hosting and social events begins. This dip is perfect for bringing to a potluck, hosting guests, or just making for yourself for a delicious and nutrient-rich snack. It’s got some sneaky protein in there (thanks to the cottage cheese), as well as hormone-friendly cauliflower to help support estrogen detoxification and liver health, which your hormones love. Ingredients

½ head cauliflower (medium, cut into florets)

2 tbsp extra virgin olive oil (divided)

½ tsp garlic powder

½ tsp smoked paprika

sea salt & black pepper (to taste)

1 cup cottage cheese

1 tbsp lemon juice

4 ozs seed crackers

Preparation

1. Preheat the oven to 400°F (205°C) and line a baking sheet with parchment paper.

2. Toss the cauliflower with half the oil, garlic powder, smoked paprika, salt, and pepper. Cook in the oven for 20 to 25 minutes until golden and tender.

3. Blend the warm roasted cauliflower, cottage cheese, lemon juice, and the remaining oil in a food processor until smooth.

4.Transfer to a bowl. Divide evenly between plates along with the crackers. Enjoy!

Notes:

Leftovers

Refrigerate in an airtight container for up to three days.

Serving Size

One serving is approximately half a cup of dip with crackers.

More Flavor

Add a pinch of cayenne or roasted red peppers.

No Crackers

Use sliced cucumbers, bell peppers, or warm pita for dipping instead.
